Made this on Friday for the first time in a while.

1 prepared pie crust (that's why it's easiest ever. Obviously you can make one, but it will take longer).
1-2 C fresh or frozen fruit, pitted or chopped as necessary. I tend to use cherries or sliced peaches or plums. If frozen, defrost and drain a bit.

for the custard:
1 C plain whole milk yogurt
1/3 C maple syrup (or you could use honey. but maple syrup is tastier.)
4 eggs
flavorings: 1/2 t vanilla, and or powdered cinnamon, nutmeg, etc. to taste, depending on your fruit.


Whisk together the custard ingredients until smooth. Put the pie crust in a pie pan, add the fruit, and pour the custard over it.

Bake until custard is firm. Due to other food in the oven, it baked at 350 for 40 minutes, after which i covered the crust with foil and turned it up to 400 for another 20. I'd probably suggest baking it at 375 or higher to start with, and keeping an eye on it.
