Two recipes

First, This Spanish chickpea and spinach stew, which I am making tonight (sans saffron). Cheap, tasty, easy and vegan.
Second,
Deviled Eggs
Take six eggs. Hardboil them, shell them, cut lengthwise and scoop out the yolks into a bowl.
chop a clove of garlic very fine, and put in a small dish. cover with lemon juice and set aside.
Add several tablespoons of good mayonnaise, and a tablespoon or two, to taste, of Dijon style mustard. Mix and mash with a fork until the texture is fairly uniform. Add more mayo if necessary.
Add a few splashes of soy sauce (I used tamari), one good shake of cayenne pepper, and several shakes of paprika, and mix.
Add the garlic and mix again. I didn't add the lemon juice because it was wet enough, but you can if you like.
Taste, and adjust paprika, pepper and soy sauce. Spoon the filling into the egg halves and top with paprika.
